Matthew Merril '22 Bakes Dessert for Lower School Lunch

Sodexo General Manager Aaron Brooks and Executive Chef Oscar Hernandez invited Matthew Merril ’22 and some of his classmates to the kitchen to prepare dessert for the Lower School on Friday, February 19. Matthew, the second runner up on season two of the Food Network’s Kid’s Baking Championship, prepared profiteroles filled with caramel pastry cream and drizzled with chocolate ganache. Matthew put his math skills to the test for this special dessert, multiplying his pate a choux and pastry cream recipes by 10 in order to make 500 puffs for his peers and the faculty. In the end, more than 75 eggs, 37 egg whites, 25 pounds of flour, 4 pounds of butter, 4 gallons of milk, 3 pounds of chocolate chips, and 1 gallon of caramel sauce were used!
